It's been ages since I've made custard. Searching out a recipe resulted in, first, the "why bother......" thought as I read about scalding milk and using a double boiler etc. Then memory clicked in of previous occasions when I "just did it......" So I just did it, again. And it worked once again! (The fact that I am surprised is telltale.)
Once again I am enjoying warm custard over a fresh fruit salad of watermelon, cantaloupe, honeydew, flame raisins, oranges, pineapple and grapefruit.
Here is what I did - enough for two servings:
In a four-cup-sized saucepan with a heavy bottom put 1 tbsp flour, one egg, 1/4 cup white sugar, a pinch of salt and one cup of milk. (I use VitaSoy Creamy Original soya milk) Whisk all together until completely blended. Place over medium heat and keep stirring with the whisk until it thickens. I think the secret is to not have any dry bits sticking to the bottom of the pan (I suppose this would be less likely if all the ingredients were mixed together in a bowl and then put in the saucepan but this means there is another dish to wash) and to keep stirring so that it heats evenly and in motion.
Once it is thickened I take it off the heat and let it cool a bit, whisking again once or twice as it cools.
You can add a tsp of vanilla if you like.
